With the new model for leveling professions (ie. each expansion having its own section vs. having a max 800 cap), how are Darkmoon Faire quests working? I haven't had a chance to test this on any of my alts yet and hoping somebody can shed some light.

Every month, you can do the 6 profession skill-up quests (for your 2 main professions and 4 secondary professions, even if they are maxed out). Each of these quests rewards 5 skill points in the corresponding profession, 1 Darkmoon Game Token (required to play the mini-games), 3 Darkmoon Prize Tickets (4 for the main profession quests) and 250 reputation with the Darkmoon Faire.
